Chef's Notes

Head Chef Amelia Hartley focuses on seasonal Australian produce, letting simple ingredients shine through precise technique. She sources from local farmers and fishermen within 100km of Sydney, and the menu changes monthly to reflect the best available produce. Amelia often joins guests in the card lounge after service to discuss the evening's poker hands.

The Atmosphere

The dining room is a study in calm contrast: white linen, dark timber, and soft pendant lighting that flatters both plates and faces. The space seats 60 guests across intimate booths and a central communal table.

A subtle acoustic design keeps conversation intimate, even when the card lounge upstairs is lively. The room's quiet elegance makes it a natural prelude to a poker evening.

Wine & Beverage

  1. Australian Wines

A curated list of 40 labels, emphasising small producers from the Hunter Valley and Margaret River. The list changes quarterly to feature new vintages. Sommelier pairings are available for the tasting menu.

  2. House Cocktails

Classic cocktails with an Australian twist, such as the 'Pearl Martini' with finger lime. Non-alcoholic versions are available for all cocktails. The bar stays open late for card lounge guests.

  3. Non-Alcoholic

A thoughtful selection of house-made sodas, teas, and zero-proof spirits. Designed to be as considered as the alcoholic list. Popular with poker players who prefer a clear head.

The Card Lounge Connection

Guests often begin with dinner in the restaurant before moving upstairs to the card lounge for a Texas Hold'em evening. The kitchen offers a special pre-poker menu with lighter dishes designed to keep players focused.

Reservations can be coordinated with poker table bookings through the venue. The transition from dining room to card lounge is a natural extension of the Crown & Pearl experience.
